This title is given to the Bourgogne AOC wines produced in seven communes immediately south-east of the city of Auxerre, in the far north of Burgundy.

Auxerre is just a short distance west of Chablisand is quite removed from the core of Burgundy's wine-growing area in Beaune, 130 kilometers (80 miles) to the southeast. The communes covered by the appellationare:Augy, Saint-Bris, Auxerre, Vaux, Champs-sur-Yonne, Quenne and Vincelottes.
Saint-Brisalso has its own specific Saint-Bris appellation for white wines. Reflecting the relative proximity to Sancerrecompared to, say, Meursault these are made from Sauvignon Blanc and Sauvignon Gris, not Chardonnay.
Wines and grape varieties
The wines can either be red, white or rosé and are produced from Burgundy's key grape varieties. The reds are made from Pinot Noir, the rosés from Pinot Noir and (optionally) Pinot Gris, and the whites from Chardonnay.
As of 2018 there were around 240 hectares (590 acres) of vineyards producing wines under the title. Pinot Noir was recorded as being planted in around 127 hectares (314 acres), with Chardonnay accounting for most of the remainder.
Terroir
The grapes are grown on the limestone-rich soils for which the Chablis area is famous. The vineyards are planted on rolling hills around the seven villages, at varying altitudes of 180 to 300 meters (600 to 1,000ft). The continental climate here contributes to the fresh, steely style of the white wines in particular.
